THE RESTAURANT
Launched in 2010, in the splendid setting of the 17th century castle of Magliano Alfieri, the restaurant represents the crowning achievement of a life project.
After years of training and study with starred chefs, armed with the experience and techniques accumulated in the finest kitchens, I embarked on my own personal adventure, driven and energised by a dream: to win the trust of my clients and lead them, with my surprise menu, to experience new combinations and flavours that they would never get the chance to taste in more traditional settings.

Ristorante Stefano Paganini alla Corte degli Alfieri is a dream come true thanks to a long and complex journey, populated by prestigious mentors and personal relationships. A perpetual learning process, a dream to be cultivated day by day, without ever neglecting the human component and all the suggestions that I try to bring to the table with every dish I make.
THE MENU
For me, cooking is about giving, trusting and taking risks. I let myself be inspired by different forms of artistic expression, by seasonal ingredients and the desire to be bold and to surprise.
Alongside the Sintesi menu, which is structured around the seasonality, proximity and territoriality of the ingredients I use, my clients will find a proposal for a surprise menu, an itinerary which in Italian I call “a occhi chiusi”, which translates literally as “with your eyes shut”, created on the basis of their preferences and curiosity. An act of trust, a continuous surprise, for dishes that are anything but ordinary.

For years Giada and I have chosen to make hospitality one of our main focuses: considering the wishes and requirements of our guests, we place every space in the location at their disposal, creating events and atmospheres designed right down to the tiniest detail.
