THE MAN BEHIND THE JACKET
On too many occasions I clung to my chef’s jacket in the past, identifying with it to such an extent that I was no longer able to tell where I ended and the character it represented began.
Behind the whiteness and the neat row of buttons is a man, a husband, a father: a human dimension that too often – out of convenience or fear – I wanted to hide.
Behind the jacket is Stefano, with all his passions and obsessions. I’m metaphorically taking off this jacket and getting ready to present myself with no armour and no mask, using the language I know best: the language of food.
MY STORY
When I was I was taking my first steps alongside prestigious starred chefs, I learned the importance of rigour, discipline and technique. They were valuable lessons that I apply every day in my private life: creativity and flair don’t go far without knowledge, method and ongoing study.
Like a young apprentice, I worked alongside famous and talented master chefs for years, learning their techniques and secrets, with humility and a sense of wonder. Colour, composition and personal style, combined with a knowledge of ingredients and skill: there is a fascinating analogy between the creation of a dish and a work of art.
STEFANO AND GIADA
I wouldn’t be who I am today without Giada, my wife. We complete each other, as much at home as in the dining room and kitchen. She restrains and structures my exuberance, helping me shape and discipline the design and creative chaos that often engulfs my mind.
Giada is my eyes and my voice in the dining room, sensing the desires and requests of every diner much quicker than I can.
It is thanks to this conciliatory power of hers that the surprise menu really succeeds in winning over anyone who chooses to engage in this act of trust.
